Prosciutto and Papaya with Lime and Tequila
- 12 Tin slices of Prosciutto, fat trimmed off
- 1 large papaya - peel, seeded, and cubed (24 cubes)
- 1 1/2 tablespoons of fresh lime juice
- 1 teaspoon of tequila
- 1 teaspoon of grated lime zest
Cut each piece of Prosciutto lengthwise and wrap the pieces of papaya (or other melon substitute) with the Prosciutto.
Arrange the wrapped papaya on a platter. In a small bowl, combine the tequila and lime juice. Sprinkle over the melon and garnish with lime zest.
