The Best Potato Salad ... Really!

Mine is the best potato salad recipe! Mine. (Although it might be perceived as a bit snobby; it's nothing typical!) There is no better for an outdoor party. This one will "make your tongue slap your brains out," as they say in New Orleans.

These are the ingredients for this delectable yummy cold picnic food recipe:

  • Around 6 large or 8 medium sized potatoes (of a variety is great: blue, yellow, white, whatever)
  • Two tablespoons of finely diced fresh fennel or dill or both
  • Two tablespoons of finely diced fresh parsley
  • Three stalks of celery
  • 1/2 teaspoon of celery seed
  • 2 tablespoons of lime or lemon juice
  • 1 tablespoon of white wine vinegar
  • 3 tablespoons of olive oil
  • 4 cloves of garlic finely chopped
  • Salt and pepper to taste
  • 1 small green onion
Is there any reason you don't have some fresh herbs: dill and/or fennel and parsley? They don't take up much room (you don't have to have a garden). This potato salad recipe is a celebration of this time of year -- the time when these herbs are at their peak!

This year, I'm even growing some onions. I didn't pick the onions, just clipped off around 5 stems. I write "one small green onion" in case you don't have the luxury.

Fennel, Dill's cousin, will give your potato salad a sweet tang. I've been in situations where fennel was available and dill wasn't. Both are fantastic and alternating between the two will give your potato salad variety.

The rule for the way I like my dressings is always equal parts oil to either lime/lemon juice or vinegar. If I don't have a lime or lemon around, I'll use vinegar or visa versa. So you can replace the vinegar with lemon or lime juice. Or you could add all 3 tablespoons of vinegar. Also, this will add variety to this potato salad recipe.

Also, if you're in the situation where spoiling is not a problem, try adding a dollop of either sour cream or plain yogurt. This is another way I've varied it.
