Honey Glazed Ham Recipe with Bourbon Glaze

This honey baked ham recipe is an easy, yet very elegant addition to your Easter dinner menu, Christmas dinner, or special brunch menu.

  • 12 to 14 pound precooked smoked ham
  • 3/4 cup bourbon whiskey
  • 1 1/2 cups dark brown sugar
  • 1/2 cup honey
  • 1 tablespoon dried mustard
  • 3/4 cup whole cloves
  • 2 oranges, peeled and sectioned

Preheat the oven to 325 degrees. Select a shallow roasting pan that is large enough to hold the ham comfortably. Place the ham fat side up on a roasting rack of the pan.

Bake on the middle rack of the oven for 2 hours, without basting, until the ham can be easily pieced with a fork.

Remove from the oven. When the ham is cool enough to handle remove the rind of the ham with a knife. Then score the ham in a diagonal fashion, making cuts 1/2 inch apart lengthwise and crosswise. Cut through the fat until you reach the meat.

Next, baste the ham with 1/2 cup of whiskey. Mix the remaining whiskey, sugar, honey and mustard. Pat this mixture into the scored sections of the ham.

Stud the intersection of each scored section with a clove. Arrange the orange slices on the ham in a decorative fashion and secure them with toothpicks.

Return the ham to the oven and increase the temperature to 450 degrees. Bake for 20 minutes until the sugar has melted and a glaze has formed. Carefully baste, as to not disturb the orange slices, once or twice.

Glazed Carrots

(8 servings)

  • 2 dozen carrots
  • 6 tablespoon of butter, melted
  • 3/4 cup of brown sugar
  • 1 1/2 tablespoons of fresh orange rind or 1 tablespoon of dried

Clean and peel 2 dozen carrots. Leave whole or cut into 2 inch pieces.

Place carrots in a pot fitted with a steam basket. Fill pot with enough water to steam the carrots on the stovetop until tender. As an alternative to steaming, the carrots may be roasted in oven.

Preheat oven to 350 degrees. Place carrots in a greased baking dish. Mix all other ingredients together and pour over carrots. Toss carrots to coat them.

Roast carrots in the oven for about 20 minutes, turn with a spatula a few times to ensure that they don't stick.
