Traditional Cheese Fondue

  • 1 1/2 pounds Emmentaler (type of Swiss Cheese), shredded
  • 4 tablespoons flour
  • 3 cups dry white wine
  • 2 garlic cloves, peeled and diced
  • 1/2 teaspoons salt
  • Pinch of white pepper (or nutmeg)
  • 2 tablespoons of Kirsch, (or substitute brandy, cognac)
  • Bite-size pieces of bread
Dredge shredded cheese in the flour. Warm wine over low heat; don't allow it to boil. When a few bubbles begin to rise to the surface, add the cheese a little at a time. Stir constantly. Melt each batch of cheese before adding more.

Rub the inside of a 2-quart round earthenware fondue pot with garlic. Add seasoning and Kirsch to the cheese mixture and mix well.

Pour into prepared pot and keep warm. Use skewers to dunk bread into fondue.

Bacon and Cheese Fondue

  • 5 slices of bacon, cooked and crumbled
  • 1/4 teaspoon garlic salt
  • 1/8 teaspoon pepper
  • 2 tablespoons of flour
  • 1/2 pound shredded Cheddar cheese, shredded
  • 1/2 pound Gruyere cheese, shredded
  • 1/2 cup white wine
Sprinkle flour over cheese. Heat wine in a saucepan over low heat (do not boil). Add cheese gradually, stirring constantly.

Once all cheese is melted, add seasonings. Transfer to a fondue pot or chafing dish and keep warm. Serve with pieces of French bread.

Welsh Cheese Fondue

  • 1 pound cheddar cheese, shredded
  • 1 tablespoon of butter
  • 1 cup of dark beer (room temperature)
  • 2 teaspoons dry mustard
  • 1 teaspoon paprika
  • 1 teaspoon Worcestershire sauce
Melt butter in pan to coat entire bottom. Add cheese, and allow to melt. Add beer slowly as it melts and stir constantly. Add seasonings. And continue to stir.

More beer may be needed if fondue is too thick. Remove from stove and keep warm in fondue pot. This fondue is wonderful with apple slices, or pieces of French bread.
