Basic Scone Recipe

Tea Scones: Serves 16

This basic scone recipe is the perfect fit for a tea party. You can create either savory cheese scones or sweeter scones by adding cranberries or orange rind. You could even add flavorings not listed if you wish, or experiment with different types of cheese. The choice is yours.

Ingredients:

  • 2 cups of flour
  • 2 tablespoons of sugar
  • 3 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 1/3 cup of butter
  • 1 egg, beaten
  • 3/4 cup of milk
  • Optional Flavors: (1/4 cup dried cranberries, 1/2 cup of cheese, or 2 tablespoons of orange rind)

Preheat the oven to 425 degrees. Mix the flour, sugar, baking powder, and salt in a bowl. Using a pastry blender, chop in the butter until the flour mixture resembles coarse cornmeal. (This can also be done in a food processor).

Add the egg and milk (and flavoring if desired). Stir minimally just to blend in the flour. A little more milk may be needed if dough is too coarse.

Turn the dough out onto a floured surface and kneed gently about 15 times (don't over kneed the dough). Cut the dough in half and make two balls. Flatten the ball to 1/2 inch thick and cut into 8 wedges (like you would cut a pie). Place on a cookie sheet and bake until light brown (about 12 minutes).
